Profile
Rich with aromas of currants, herbs de provence and tobacco. On entry, the palate is rich with flavors of red plum, stewed strawberries and spice with a velvet, slightly smoky finish.

Fermentation: 100% de-stemmed and fermented with native yeast in an open top 1-ton fermenter on skins for 17 days, gently basket pressed
Aging: 25% new French oak on lees for 10 months
Bottled: Without fining or filtering
