Struck stone and charred meat aromas kick off the nose of this bottling, which then brings dark berry, rounded florals and plenty of chaparral to the party as it opens up. The palate is tense in structure and lively with plum, clove and more chaparral flavors.

Fermentation:  100% de-stemmed and fermented with native yeast in an open top 1-ton fermenter on skins for 17 days, gently basket pressed
Aging: 25% new French oak on lees for 10 months
