Aromas of dark fruit, dried herbs, with a hint of cedar and tobacco fill the glass. The palate upon entry is mid-weight with flavors of blackberry and blueberry fruit below the aromatics of mint spice and earthiness.
Production Notes
Fermentation: 100% de-stemmed and fermented with native yeast in an open top 1 ton fermentor on skins for 10 days, gently basket pressed
Aging: 20% new French oak on lees for 11 months
Bottled: Without fining or filtering
